No Bake Raw Vegan Protein Balls

These protein balls aren’t just healthy, they are versatile and delicious! You can use them for a quick snack while on the go, or even as a healthy substitute for dessert.

I know it sounds crazy, but to be honest, these are my obsession! I have been making them for the past two years and they are now a fixture in my daily diet. Like most, I have a huge sweet tooth. I used to always crave all types of desserts, sugary drinks, and my favorite – chocolate. While I still indulge from time to time, I needed to come up with something better. After some research and definitely plenty of trial and error, I came up with this recipe. These little guys not only taste amazing, they are filled nutritional value and are a big part of my strategy to live a healthier lifestyle. Snacking on these instead of candy has also helped me trim some stubborn belly fat!

This recipe makes around 12-15 protein balls, which usually lasts me about a week (unless my husband finds them). You can find these ingredients at most grocery stores and you’ll need a food processor as well.

Ingredients:

• 10 dates (no pits)
• 1 cup raw almonds
• 1/2 cup walnuts
• 2 tbsp flaxseeds
• 2 tbsp chia seeds
• 1 tsp matcha powder
• 1 tsp vanilla powder or extract
• 1 tbsp coconut butter
• 1/2 cup oats
• 2 tsp raw almond butter

Step 1 – The Mix: In a food processor add in walnuts, almonds, flaxseeds, chia seeds, matcha powder and blend until fine. Next add in the pitted dates, coconut butter, vanilla extract and blend again until smooth. Then, in a separate bowl, mix the oats with the raw almond butter. Now take the blended ingredients from the food processor and add them in.

Step 2 – The Balls: Before rolling the balls, you will need to set aside an air tight Tupperware lined with a baking sheet. Now the fun part! Using your hands, really dig in and mix all of the ingredients together into a firm but moldable paste, and roll them into bite-sized balls. If you make 1 inch size balls, you should end up with about 12-15 total.

Now just put them in the container, pop them in the fridge, and enjoy them whenever you want!
